Out GASTROnomicLAB is the synthesis of our whole project. It is more than just a place to cook or eat, it is a space for the senses that reflects the contemporary tendency to overcome common aesthetic categories, to find new paths far away from canons, to set free, open ways to understand trans-disciplinar creation.
The nature of everything we can eat is particularly appropriate to think about the mechanisms of perception, from a theoretical perspective, and it makes quite easy to explore new expressive forms, in practice. Cooking appeals directly to the taste, in all its forms and nuances, but it implies all the other senses: sight, smell, hearing and touch. Not to mention the intellectual pleasure...
Not too different, indeed, from every other old artistic practice. The material is clearly different, but the plastic, narrative and poetic coincepts remain: composition, color, texture, rhythm, mise en scene... As pointed out by Richard Hamilton in his famous text "Thinking about eating", cookers, like poets, conceive new languages. By means of this idea we can understand the labour of Ferran Adria, and we can also understand what GastroLAB project is about. Enjoying a meal here is the result of a huge process that starts from an idea that must be carefully evolved and presented before reaching the dish. A new sort of aesthetic research or, in other words, a new kind of language which allows us to understand the importance of what we eat.
